Chaulai is a species of plant grown all over the world.  Till now, 40 species have been found and recognized, whose flower colors are purple, red, and golden. Chaulai is a healthy vegetable for the summer and rainy seasons. It can grow in almost all season but yields more in warmer environments. Sandy soil with no stone is suitable for its cultivation. It can also be cultivated in small lands.  

There are several species found in India: small amusement, big chaulai, Pusa Kirti, Pusa lal chaulai, Pusa Kiran, and peacock feather. 

Medicinal Utilities of Chaulai 

Chaulai is used in many allopathic and ayurvedic medicines. Some of them are mentioned as below: 

It prevents almost all types of poisons, so it is also known as poisoning. 

The gold metal is found, which is rarely found in vegetables. 

Five organs called Panchag of chaulai – roots, stalks, leaves, fruit, and flowers are used as medicine. 

Red Chaulai is very beneficial for stomach diseases because it contains rich fiber; an alkaline substance pushes out the stool by sticking in the intestines, clearing the stomach, relieves constipation, and strengthening the digestive system. 

2-3 tablespoon juice of Amaranth  is excellent for the digestion of young children. It is also helpful for the mothers after delivery as it helps to make milk to feed the baby. 

To get rid of Leucorrhoea, you can grind its root add mix the same in rice flour, put few drops of honey, and have it. 

Many disorders are cured by regular consumption of Amaranthus. 

Health Benefits of Chaulai

Excellent for Eye: Chaulai consists of high levels of antioxidants, carotenoids, and vitamin A. It helps improve eye health, decelerates retinal damage, and thus, prevents the development of cataracts. 

Immunity Booster: Leafy greens are rich in vitamin C; Amaranthus has 70% of vitamin C in 100 gms of chaulai. This vitamin is a water-soluble vitamin and is needed for fighting off infections and for quicker wound healing. It also lessens the effect of free radicals that are responsible for aging and many types of cancer. 

Amaranth leaves and grains are called fine food because they are advantageous for almost every organ of the body. You can easily add this to your diet as it tastes well and has numerous health benefits. For anemic people, it is a boon. Rich in fibre, Folate, protein, iron, calcium, copper, essential vitamins, magnesium, and zinc. Copper and manganese are the producers of antioxidative properties in the body. Red blood cells produced by copper, zinc is needed for growth, digestion, and the maturing of the human body.  

You can add chaulai leaves to your diet. You can cook it as a vegetable or mix the leaves with moong dal or toor dal, another way to make delicious curry with gram flour.
